2largeripe bananasmashed

½cupgranulated sugar
½cuplight or dark brown sugar
½cupextra virgin olive oil
2tspvanilla extract
⅓cupbuttermilk
1 ½cupsflourspooned & leveled
1tspbaking soda
1tspsalt
coarse sugar for toppingoptional
Instructions
Preheat the oven to 350°
In a large bowl add the mashed bananas, eggs, olive oil, sugars and vanilla. Give it a good mix. Add in the buttermilk and mix to incorporate. Add in the dry ingredients and mix just until absorbed.
Pour the batter into a prepared loaf pan & top with coarse sugar for crunch. Bake for 50-60 minutes or until the center is set. Allow the loaf to come to room temperature before slicing. ENJOY!
