Glazed Apple Fritter Loaf

Sweet cinnamon apples tucked inside a vanilla cake batter and finished with a sweet glaze. This Glazed Apple Fritter Loaf is a cozy fall bake!

Ingredients

Loaf

  • cup flour spooned and leveled
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 stick butter softened
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs room temp
  • cup sour cream room temp
  • 4 oz applesauce

For the apples

  • 2 cups chopped apples gala, granny smith, honeycrisp, etc.
  • ¼ cup brown sugar
  • 1 tbsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk
  • ¼ tsp vanilla extract

Instructions

  • Preheat the oven to 350°
  • In a large bowl, add the chopped apples along with the brown sugar and cinnamon. Mix well and let it sit for 15 minutes.
  • In another bowl add the softened butter, sugar and vanilla extract. whisk until well combined. Add in the eggs and incorporate one at a time. Next add in the apple sauce and sour cream. Mix well. Stir in the dry ingredients. Don't over mix.
  • Add half the batter to a prepared loaf pan. Spoon over the marinated apples along with some of the liquid. Top with the remaining batter and more apples. Finish with coarse sugar (optional) and bake for 50-60 minutes. Just until the center is set. Let it cool for 15-20 minutes before glazing. Slice and enjoy with your favorite cup of coffee.

Glaze

  • Add the powdered sugar to a bowl, along with the vanilla extract & milk. Whisk together until there are no lumps. Set aside until ready to use.
