Feral for summer peaches. Honey mangos, sweet yellow peaches & agave. Olive oil and flaky salt on top. Perfect for a hot summer day. If you don’t have an ice cream maker, you could freeze the fruit and blend in a high powered blender or food processor with agave, until smooth.

Bakllava has always been my favorite Albanian dessert, but sometimes the syrup can be too sweet. So instead, I like to add condensed milk mixed with a little whole milk to thin it out. SO GOOD. 11/10. I didn’t have any phyllo sheets, so I made my own. I used a mixture of walnuts and pecans. I don’t like adding cinnamon, but you absolutely can. Happy Wednesday ❤️

The most tender Olive Oil Chocolate Zucchini Loaf. Drooling all over again. it’s seriously so good and gooey. Falls apart in your hand and melty chocolate throughout. Recipe below!

INGREDIENTS

2 large eggs
1/2 cup olive oil
1 cup granulated sugar
2 tsp vanilla extract
2/3 cup buttermilk
1 1/4 cup all purpose flour
1/3 C+ 2 tbsp cocoa powder
1 tsp salt
1/4 tsp baking powder
1/2 tsp baking soda
1 medium zucchini (grated)
1/2 cup milk chocolate chips (or dark)
Coarse sugar for topping
Chocolate chips for topping

DIRECTIONS

1. Preheat your oven to 350

2. In a large bowl add your eggs, olive oil, sugar, vanilla and buttermilk. Whisk until smooth.

3. Add in the flour, cocoa powder, baking soda, baking powder & salt. Mix until there are no pockets of flour left.

4. Fold in the zucchini and chocolate chips. Pour into a prepared loaf pan. Top with more chocolate chips and coarse sugar (optional) and bake for 1 hour, or until the center is set. Allow to cool before slicing. Enjoy.

French-Style Vanilla Bean Ice Cream! My ice cream maker has been my favorite purchase during the pandemic. Recipe below! 🍦❤️‍🔥

INGREDIENTS
1 3/4 cup whole milk
2 cups heavy cream
1 vanilla bean pod
3/4 cup sugar
pinch of salt
6 large yolks

INSTRUCTIONS
1. In a medium saucepan, on low heat, add the milk, cream, 1/2 cup sugar & salt. Scrape the seeds from the vanilla bean and add it to the milk mixture along with the pod.

2. While the mixture is warming through , whisk the eggs and the remaining 1/4 cup sugar in a bowl. Stream in 1/3 of the warm milk while whisking constantly to avoid the eggs from curdling. Add it back to the saucepan on medium heat to thicken. About 3-5 minutes. Do not boil.

3. Once thickened pour the ice cream base into a bowl, over a fine mesh strainer. Immediately cover the surface with plastic wrap. Refrigerate overnight or until cool. You can add the bowl over a larger bowl of ice to speed up the process and whisk until the mixture cools down.

4. Once the ice cream base has cooled, remove from the fridge and pour into your ice cream maker. Follow the manufacturer’s settings/intsructions. Once frozen, transfer to a loaf pan or a container with a lid. Cover with plastic. Freeze until the ice cream is set & firm.
