Ingredients
Yellow Cake Cookies
1cupsugar
1sticksalted butter
1tbspvanilla extract
1largeegg
1egg yolk
2tbspsour cream
2cupsflour
½tspbaking soda
¼tspbaking powder
½tspsalt
Chocolate Frosting
4tbspsoftened buttersalted
¾cuppowdered sugar
¼cupcocoa powder
2-4tspmilk or cream
1tspvanilla extract
Instructions
Yellow Cake Cookies
In stand mixer fitted with a paddle attachment. Cream the butter, sugar and vanilla. Add in the egg, egg yolk and sour cream. Mix until combined. Be sure to scrape the sides of the bowl.
Next, add in the flour, salt, baking soda and baking powder. Mix until the flour is absorbed. The dough will be slightly tacky. Allow the dough to chill for 1-2 hours.
Preheat the oven to 350°. Using a 2 oz cookie scoop, roll the dough into balls. Bake them on a parchment lined sheet pan for 10-12 minutes. Allow to cool before frosting. Finish with sprinkles & enjoy!
Chocolate Frosting
In a small bowl, using a handheld mixer. Cream the butter until soft. Add in the powdered sugar, cocoa powder, vanilla & milk. Mix until smooth and creamy. If it’s too thick or pasty, add a tsp of milk at a time until creamy, but still holds its shape.
