Chocolate Frosted Yellow Cake Cookies

Ingredients

Yellow Cake Cookies

  • 1 cup sugar
  • 1 stick salted butter
  • 1 tbsp vanilla extract
  • 1 large egg
  • 1 egg yolk
  • 2 tbsp sour cream
  • 2 cups flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt

Chocolate Frosting

  • 4 tbsp softened butter salted
  • ¾ cup powdered sugar
  • ¼ cup cocoa powder
  • 2-4 tsp milk or cream
  • 1 tsp vanilla extract

Instructions

Yellow Cake Cookies

  • In stand mixer fitted with a paddle attachment. Cream the butter, sugar and vanilla. Add in the egg, egg yolk and sour cream. Mix until combined. Be sure to scrape the sides of the bowl.
  • Next, add in the flour, salt, baking soda and baking powder. Mix until the flour is absorbed. The dough will be slightly tacky. Allow the dough to chill for 1-2 hours. 
  • Preheat the oven to 350°. Using a 2 oz cookie scoop, roll the dough into balls. Bake them on a parchment lined sheet pan for 10-12 minutes. Allow to cool before frosting. Finish with sprinkles & enjoy!

Chocolate Frosting

  • In a small bowl, using a handheld mixer. Cream the butter until soft. Add in the powdered sugar, cocoa powder, vanilla & milk. Mix until smooth and creamy. If it’s too thick or pasty, add a tsp of milk at a time until creamy, but still holds its shape.
