Ingredients
For the apples
5large apples, roughly choppedgala, pink lady, granny smith, or a variety
⅓cupgranulated sugar
⅓cupdark brown sugaror light brown
1½tbspcorn starch
2tspcinnamon
¼tspnutmeg
1tbsplemon juice
⅓cupwater
1tbspvanilla extract
pinch of salt
Cobbler topping
1stickcold buttercubed
1⅓cupall purpose flour
¼cup brown sugar
⅓cupgranulated sugar
1tbspbaking powder
⅔ Cheavy cream
pinch of salt
2tbspheavy cream
coarse sugar for topping

Preheat the oven to 350°
Add all the ingredients to a 10 inch skillet and cook on med-low heat for 10-12 minutes. The liquid should be slightly thickened and the apples just beginning to soften. Turn the heat off, and carefully spread the cobbler topping over the apples. Brush with heavy cream and sprinkle with coarse sugar. Bake for 30-35 minutes until the top is golden brown. Enjoy with your favorite ice cream or whipped cream.
Cobbler topping
To make the cobbler topping, add all the dry ingredients to a bowl and mix. Toss in the cold butter cubes and use your fingertips to squeeze the pieces into the flour. The mixture will be coarse and sandy. Pour in the heavy cream and stir just until combined. It should look and feel like soft, but pliable cookie dough. Set aside.
