Easy Apple Cobbler

Apple Cobbler! I’ve been missing my peach cobbler so much so I had to make an apple version. With a few tweaks of course! And it’s TOO good! I used up the remaining apples I had from apple picking and put them to good use. 

This easy apple cobbler is the perfect warm & cozy fall dessert. There’s juicy apples, a thick cakey topping and coarse sugar on top for a added crunch. 

I used a variety of apples. Sour & sweet. You can use your favorite ones! Gala, Granny Smith. Something that’s firm and can hold up to heat well. You don’t want mushy apple cobbler.

For the apples, I prefer to leave the skins on but you can peel them if you’d like. The apples first get cooked on the stove top to soften a bit and then the once the cobbler topping is added, I transfer it to the oven to finish. 

Whenever i’m baking cobblers, loafs, or any type of galette. I love adding coarse sugar to the top. It creates this crunchy texture that is so good! I usually use demerara sugar but any coarse sugar will do the trick.

For the apples

  1. Coarsely chop 5 apples. Make sure they are even in size. You can leave the skins on.
  2. Add them to a skillet along with sugar, brown sugar, vanilla, lemon juice, water, cinnamon, nutmeg & cornstarch.
  3. Cook the apples on med/low heat for 10-15 minutes, until the liquid is thickened and the apples are starting to soften.
  4. Remove from heat.

How to make the cobbler topping

  1. Add all the dry ingredients to a bowl. 
  2. Toss the butter and use your fingertips to smoosh the butter into the flour. 
  3. Pour in the heavy cream and mix until combined. The mixture will be thick and feel like a soft, but pliable cookie dough.

This cobbler topping is my absolute favorite. It gets thick and cake-y and the juices from the apple absorb into it. It’s a bite of deliciousness.

Ingredients

For the apples

  • 5 large apples, roughly chopped gala, pink lady, granny smith, or a variety
  • cup granulated sugar
  • cup dark brown sugar or light brown
  • tbsp corn starch
  • 2 tsp cinnamon
  • ¼ tsp nutmeg
  • 1 tbsp lemon juice
  • cup water
  • 1 tbsp vanilla extract
  • pinch of salt

Cobbler topping

  • 1 stick cold butter cubed
  • 1⅓ cup all purpose flour
  • ¼ cup brown sugar
  • cup granulated sugar
  • 1 tbsp baking powder
  • ⅔ C heavy cream
  • pinch of salt
  • 2 tbsp heavy cream
  • coarse sugar for topping

Instructions

Apples

  • Preheat the oven to 350°
  • Add all the ingredients to a 10 inch skillet and cook on med-low heat for 10-12 minutes. The liquid should be slightly thickened and the apples just beginning to soften. Turn the heat off, and carefully spread the cobbler topping over the apples. Brush with heavy cream and sprinkle with coarse sugar. Bake for 30-35 minutes until the top is golden brown. Enjoy with your favorite ice cream or whipped cream.

Cobbler topping

  • To make the cobbler topping, add all the dry ingredients to a bowl and mix. Toss in the cold butter cubes and use your fingertips to squeeze the pieces into the flour. The mixture will be coarse and sandy. Pour in the heavy cream and stir just until combined. It should look and feel like soft, but pliable cookie dough. Set aside.
