Chocolate Frosted Yellow Cake Cookies

Chocolate Frosted Yellow Cake Cookies. Your favorite childhood cake with the rainbow sprinkles. But in cookie form! Yellow cake is my favorite. It’s classic and simple. I always make it for my family on their birthdays. And it’s the inspiration for these cookies. 

There are plenty recipes of “cake mix” cookies but I wanted something from scratch. These cookies are similar to sugar cookies but taste like yellow cake, with that vanilla-forward flavor. The texture is super moist and cakey but also slightly chewy like a cookie. You’re going to love these!

Cookies 

  • In stand mixer fitted with a paddle attachment, cream the butter, sugar and vanilla. 
  • Add in the egg, egg yolk and sour cream. Mix until combined. Be sure to scrape the sides of the bowl down.
  • Next, add in the flour, salt, baking soda and baking powder. Mix until the flour is absorbed. The dough will be slightly tacky. Allow the dough to chill for 1-2 hours.

How to make chocolate frosting 

  • In a small bowl, using a handheld mixer. Cream the butter until soft. Add in the powdered sugar, cocoa, vanilla & milk. Mix until smooth and creamy. If it’s too thick, add a tsp of milk at a time until creamy but still holds its shape. 

I was going through my blog posts the other day and came cross my Yellow Sheet Cake with Chocolate Frosting. It really is the best ever! I was contemplating on re-shooting them but then I just said to myself “let me reinvent this” and that’s how these cookies were born. 

Yellow cake is not complete without sprinkles! I used Halloween sprinkles the last time I made these and my daughter loved them! You can use any kind you like. For these Chocolate Frosted Yellow Cake Cookies, I like to add a bit of sour cream and an extra egg yolk to the batter. It makes for soft & cake-y cookies that are so delicious! They are not baked for very long. You don’t want them golden, and they are pretty pale in color, which is also due to the fact that only white sugar is used.

The cookies are weighed to 2 oz and rolled into balls. They don’t flatten much and have a thickness that is perfect for frosting.

Ingredients

Yellow Cake Cookies

  • 1 cup sugar
  • 1 stick salted butter
  • 1 tbsp vanilla extract
  • 1 large egg
  • 1 egg yolk
  • 2 tbsp sour cream
  • 2 cups flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp salt

Chocolate Frosting

  • 4 tbsp softened butter salted
  • ¾ cup powdered sugar
  • ¼ cup cocoa powder
  • 2-4 tsp milk or cream
  • 1 tsp vanilla extract

Instructions

  • In stand mixer fitted with a paddle attachment. Cream the butter, sugar and vanilla. Add in the egg, egg yolk and sour cream. Mix until combined. Be sure to scrape the sides of the bowl.
  • Next, add in the flour, salt, baking soda and baking powder. Mix until the flour is absorbed. The dough will be slightly tacky. Allow the dough to chill for 1-2 hours. 
  • Preheat the oven to 350°. Using a 2 oz cookie scoop, roll the dough into balls. Bake them on a parchment lined sheet pan for 10-12 minutes. Allow to cool before frosting. Finish with sprinkles & enjoy!
