Banana bread forever! Especially this olive oil banana bread. It just works so well together. The fruity notes pair so well with the banana, it’s a match made for sure! Using olive oil in baked goods is all the rage and I don’t think the “trend” is going anywhere anytime soon. Olive oil adds a lot of boldness and flavor, but it can sometimes overwhelm. You also wanna be sure to use a high quality tasting olive oil. I love using Paesanol’s.

I know there are hundreds of ways to make banana bread, but this is by far my favorite. It’s super tender & flavorful without overpowering. And it is so simple!
Oil vs. Butter
There’s a place for both! It’s no secret that oil makes baked goods SUPER moist and butter does too but it really just tastes amazing. A lot of recipes call for neutral oils so the flavor doesn’t stand out or overpower, but with this recipe, a bold tasting olive oil is the way to go!
This recipe all comes together in one bowl and made in a loaf pan. I love the ease of this recipe and it is the most delicious banana bread you will ever have!
Ingredients for olive oil banana bread
- Ripe bananas
- Extra virgin olive oil
- Eggs
- Granulated sugar
- Brown sugar
- Vanilla
- Buttermilk
- Flour
- Baking soda
- Salt
The addition of buttermilk in this recipes makes it even more tender! I like to whole milk buttermilk, but any will do. If you don’t have buttermilk you can also sub with a mixture of sour cream & milk.
For all my loaf cakes I love adding a layer of coarse sugar to the top before it bakes. It sets and creates this crunchy & delicious topping.
Olive Oil Banana Bread

- 1 large bowl
- 1 Loaf pan
Ingredients
- 2 large ripe bananas mashed
- 2 large eggs
- ½ cup granulated sugar
- ½ cup light or dark brown sugar
- ½ cup extra virgin olive oil
- 2 tsp vanilla extract
- ⅓ cup buttermilk
- 1 ½ cups flour spooned & leveled
- 1 tsp baking soda
- 1 tsp salt
- coarse sugar for topping optional
Instructions
- Preheat the oven to 350°
- In a large bowl add the mashed bananas, eggs, olive oil, sugars and vanilla. Give it a good mix. Add in the buttermilk and mix to incorporate. Add in the dry ingredients and mix just until absorbed.
- Pour the batter into a prepared loaf pan & top with coarse sugar for crunch. Bake for 50-60 minutes or until the center is set. Allow the loaf to come to room temperature before slicing. ENJOY!
