Strawberry season is approaching and lately i’ve been finding some really sweet ones. So I made the most delicious Strawberry Cobbler! This is an adaptation of my Rum Peach Cobbler. Recipe below!

INGREDIENTS
* 2 lbs strawberries (halved if large)
* ⅓ granulated sugar
* 2 tsp vanilla
* 2 tbsp cornstarch
* 1 tsp salt

COBBLER TOPPING
* 1 stick cold butter cubed
* 1⅓ flour
* 1 tsp salt
* ½ cup granulated sugar
* 1 tbsp baking powder
* ½ cup + 2 tbsp heavy cream plus extra for brushing the tops
* 2-3 tbsp sugar for topping

INSTRUCTIONS
1. Preheat the oven to 350
 2. Mix the strawberries, sugar, vanilla, cornstarch and salt. Let it sit for 10 minutes. Transfer the mixture to a 10 inch skillet or casserole dish.
 3. To make the cobbler topping, add all the dry ingredients to a bowl and stir. Toss in the cold butter cubes and use your fingertips to squeeze the pieces into the flour until the mixture is coarse. Pour in the heavy cream and stir until a dough forms. It should look and feel like cookie dough.
 4. Evenly spread the topping over the strawberries. Lightly brush with heavy cream and sprinkle with sugar. Bake for another 30-35 minutes until the top is golden brown. Enjoy warm with a scoop of your favorite ice cream on top!

Detroit-style pizza will always be in my top 5. Used my overnight focaccia recipe for the dough and baked it in my @lodgecastiron pan. The corners got so chewy & crusty. Perpperoncini juice on top was SO GOOD! And RANCH for dipping is the only correct answer! (not up for debate 🙃) 11/10

INGREDIENTS - (2) 16 oz beverages
1 ripe honey mango
1.5 cups fresh pineapple chunks
2/3 cup unsweetened coconut mik (from a can)
1 tsp vanilla
1/4 cup simple syrup, maple, honey or agave (1/3 cup if you prefer a sweeter drink)
4-6 oz dark or light rum
handful of ice
whipped cream for topping
pineapple & mint for garnishing

DIRECTIONS
1. Add all the ingredients to a blender and blend until smooth. You can also use an immersion blender. Pour into a glass.
2. Top with whipped cream and a pineapple slice (optional). Enjoy!
