Pistachio Croissants! These were SOOOOOOO good and my new favorite twist on an “Almond Croissant” Recipe below!

INGREDIENTS

4 medium sized croissants
1/4 cup sugar
4 tbsp softened butter
1 tsp vanilla extract
1/4 tsp almond extract
1 large egg
1 cup ground pistachios
2 tbsp flour
pinch of salt
more pistachios for topping

FOR THE SYRUP
1/4 cup water
1/4 cup sugar
1/2 tsp almond extract

DIRECTIONS

1. For the syrup, add the ingredients to a small saucepan and heat just until the sugar dissolves. Add it to a bowl and set aside. (it will continue slightly thicken)
2. For the pistachio cream, add butter, sugar and extracts to a bowl and mix well. Next, add in the egg and combine. Stir in the ground pistachios, flour & salt and mix until a paste forms.
3. Slice your croissants in half and place them on a baking sheet. Brush each slice with the cooled down syrup to lightly soak. Pipe or spread the pistachio cream generously on the bottom half and top with the other. Pipe more cream on top of the croissant and sprinkle with pistachios. bake for 12-15 minutes @ 375. Finish with powdered sugar and ENJOY!
