Glazed Apple Fritter Loaf

Apple season means all the apple desserts. And since it’s the day before Fall. This recipe couldn’t be more fitting. So let’s make a Glazed Apple Fritter loaf. It’s Sweet, slightly tart and loaded with cinnamon apples. It’s all topped with a crunchy glaze.

We went apple picking last week at Wilkins in upstate New York. We picked a bunch of Gala apples and other varieties. So now I have a bag full of delicious apples. I’ve been baking all week. And this one was one of my favorite fall bakes!

Nothing quite like an apple fritter. It’s the best doughnut in my opinion. But the hassle of frying can sometimes take away the enjoyment of eating them. ONLY SOMETIMES! So I made this Glazed Apple Fritter Loaf that has those same delicious fall flavors and it is SO GOOD! 

What kind of apples to use?

When baking, I always say use your favorite. I like to use a mixture of granny Smith and Gala. A little crisp a little sweet and a little tart. Fuji & Honeygold’s are also great! You want something crisp and firm so it want turn to mush when baked.

Ingredients 

  • flour
  • sugar
  • eggs
  • butter
  • applesauce (unsweetened)
  • sour cream
  • vanilla extract
  • baking soda 
  • baking powder
  • 3-4 medium sized apples (about 2 cups when chopped) 
  • brown sugar
  • cinnamon 

Before I prepare the batter, I prepare the apples first. Once they’re all chopped up. I Add them to a bowl along with the brown sugar and cinnamon. No need to peel the skins. Let it sit for at least 15 minutes. You’ll want to use the yummy cinnamon-sweet liquid from the apples  in the batter as well. 

And of course, you can’t forget the glaze. It’s the final step that really makes this apple fritter loaf SO GOOD and classic. 

How to make a glaze

  1. Add 1 cup of powder sugar to a bowl, along with 1/4 tsp of vanilla extract & 2 tbsp of milk. Whisk together until there are no lumps. Set aside until ready to use.

Glazed Apple Fritter Loaf

Ingredients

Loaf

  • cup flour spooned and leveled
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 stick butter softened
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 2 large eggs room temp
  • cup sour cream room temp
  • 4 oz applesauce

For the apples

  • 2 cups chopped apples gala, granny smith, honeycrisp, etc.
  • ¼ cup brown sugar
  • 1 tbsp cinnamon

Glaze

  • 1 cup powdered sugar
  • 2 tbsp milk
  • ¼ tsp vanilla extract

Instructions

  • Preheat the oven to 350°
  • In a large bowl, add the chopped apples along with the brown sugar and cinnamon. Mix well and let it sit for 15 minutes.
  • In another bowl add the softened butter, sugar and vanilla extract. whisk until well combined. Add in the eggs and incorporate one at a time. Next add in the apple sauce and sour cream. Mix well. Stir in the dry ingredients. Don't over mix.
  • Add half the batter to a prepared loaf pan. Spoon over the marinated apples along with some of the liquid. Top with the remaining batter and more apples. Finish with coarse sugar (optional) and bake for 50-60 minutes. Just until the center is set. Let it cool for 15-20 minutes before glazing. Slice and enjoy with your favorite cup of coffee.
