Smashed russet potatoes with dill vinaigrette. Love love love dill! And other than an obnoxious amount of ketchup, I always need some kind dipping sauce or topping for potatoes! This one is GOOD. Easy recipe below 💚

Preheat the oven to 425.

Scrub and rinse 2 lbs russet potatoes or any small sized potatoes. Boil until fork tender. Place them onto a sheet pan with plenty of olive oil. Smash them with the bottom of a clean jar or glass. If the potatoes are too big, cut them in half. Add more olive oil on top. Season with salt, pepper and smoked paprika. Pop them into the oven for about 25-30 minutes. Then broil them for an additional 8-10 min.

In a small bowl, add 1/4 C chopped dill, 1 tsp grated garlic, 2 tbs olive oil, zest and juice of 1/2 lemon, 1-2 tsp red wine vinegar, 1 tsp agave and S&P to taste. Drizzle over your crispy potatoes and enjoy.

Roasted some grapes along with some goat cheese in the oven and it was heavenly. If you love salty sweet snack combos, this is it. Served this with crusty sourdough bread and some olive oil. So much delicious flavor.

Puff pastry pizza! So easy, but really really delicious. Didn’t feel like scratch making dough but wanted some pizza quick. I rolled out my pastry to flatten it a bit and topped it with some leftover pasta sauce, and ricotta cheese. You can use whatever sauce or toppings you’d like. Baked it at 400 until the edges were puffed and lightly golden brown. About 20-25 minutes. I finished with some olive oil, S&P, crushed red pepper, oregano, freshly grated parmesan and of course fresh basil. Simple and Flaky buttery goodness 🙃
